In some states, protesters who prevent people from leaving a venue are committing unlawful detainment (if I have the correct term). Of those states, in some of them citizens are authorized to use force, even deadly force to escape such unlawful detainment.

I don't quite agree with turning protesters in traffic into crinkle cut patties, however I do believe law enforcement should round them up, charge them, and let them pay the price. My first impulse, if it happened to me would probably not be pretty. Hopefully my belief in the rule of law is as strong as I think it is. I can't justify responding to a crime with a crime, but again, it hasn't happened to me yet.
Charging them isn't the issue as much as them actually facing genuine punishment for their acts. When judges disregard the laws because they agree with the defendant's politics, at most the perps get a light slap on the wrist (maybe a day or so in a holding cell) then get let out without further punishment (and now with bragging rights about jail, however briefly they were in it), there's no disincentive for their antisocial behavior, and anyone who stands up for society in general is instead made the target of judicial ire. Just ask Daniel Penny how that goes. He may have won the case, but the process is the punishment.
I understand your reluctance about terminal behavioral modification, but unless the judicial system pulls its head from its rectum, so to speak, there's going to be increasingly less reluctance towards a permanent dissuasion from the behavior, potentially following in the footsteps of the guy in Panama who shot a road blocker.

The well organized protesters soon identified the choke points as the causeways and bridges between the barrier islands and the mainland. Many motorist found themselves trapped for hours by these brats in legendary traffic snarls.
Ol' Wayne, no shrinking violet, took to the airwaves to tell motorist that if they felt threatened, to go right ahead and run over the miscreants, they wouldn't be charged. And that ended that.

How would you feel about the protestors if they blocked an ambulance that was carrying someone you cared about to the emergency room?
They have done just that several times over the past 5 years or so, in New York, LA, and elsewhere.
